Pico de Gallo

We've been blessed with great friends from our church small group.  We get together one a week to share dinner with each other, let the kids play together, and just spend time fellowshipping with like-minded people.

This week we had fajitas - I love, love, love, fajitas!!  Almost as much as I love the pico de gallo that comes on the side!!!!  We rotate houses and the host for that week makes the main dish and then the rest of us bring sides and such.  We had homemade beans, cheese dip, and guacamole, and I made the pico!!! 
I've made several recipes trying to replicate what my taste buds love when we're out to eat and I'm pretty convinced that this particular pico de gallo recipe is the same recipe that is made in thousands of Mexican restaurants across the country :-) In case you've been living under a rock, pico de gallo is a beautiful and aromatic Mexican condiment, which is served with fajitas or tacos, as well as with nachos and tortilla chips!

This is the basic pico de gallo recipe but you can adjust the "temperature" level if you want to. Pico de gallo can be compared to a salsa but it has less liquid, which means you, can eat it with a spoon! It is made with salad vegetables, peppers and lime juice for a fresh flavor.
The onion and tomatoes form the base of this pico de gallo recipe and the other ingredients add flavor to it.

So here's what you'll need:
1/2 whole Large (or 1 small) white onion
5 ripe plum (Roma) tomatoes - firm
2 jalapeño peppers
½ cup fresh cilantro leaves
1 tablespoon lime juice
Salt to taste
 
Chop jalapenos, tomatoes and onions into a very small dice. (Leave seeds in your jalapenos for a hotter pico). Adjust amount of jalapenos to your preferred temperature. Next, chop up a nice-sized bunch of cilantro. Just remove and discard the long leafless stems before chopping. No need to remove the leaves from the stems completely. Place all of these ingredients together in a bowl and give it a good stir.  Squeeze the juice of half of one lime into the bowl. Add salt to taste and stir again.  Enjoy!
