We brought home a huge watermelon from the Farmer's Market yesterday - I wish I would have taken a picture of it whole before we cut into it...It quite possibly could have weighed more than Atticus!!
The mint in our garden has exploded and so I was looking for other ways to use it (I can only make so much mint tea!)...so I ran across this recipe and it was delicious!! We had dinner with some of Aaron's new colleagues this weekend and were asked to bring dessert, this was so perfect!! PLUS, I had also picked up a pint of organic locally grown blueberries at the market (I LOVE having access to such great produce!!).
Easy, Easy, Easy and SO yummy!!
Bring 1/4 cup each sugar and water to a simmer in a saucepan. Remove from the heat, add 3 mint sprigs and steep 10 minutes. Discard the mint; add the zest and juice of 1 lemon and a pinch of salt. Toss with 2 cups blueberries and 3 cups cubed watermelon. Let stand 15 minutes. Top with chopped mint.
